Heavenly Pomegranate and Guava Fruit Salad

There is absolutely no cooking involved in this recipe (I even feel guilty calling it a "recipe") but it is so delicious I had toshare it. It's been a winter staple at my house ever since I was a child and I never tire of it (it is super healthy as well: pomegranates are extremely rich in antioxidants and guavas have 5 times the vitamin C of an orange!)

I know many people shy away from pomegranate recipes because they are a bit tedious to peel and seed; there are different ways of doing this, but scoring and peeling them under water is probably the easiest. Be careful though, pomegranate juice stains!

Serve this recipe to dinner guests and trust me, they will be impressed by this simple, unique and delicious dessert.

Ingredients:

3 pomegranates
5 guavas*
1 cup of water
Juice of 1 lemon
Sugar, to taste
Fresh mint for decoration (optional)

Seed the pomegranates and put them aside.

Seed 3 guavas and put them in a blender, adding 1 cup of water -- blend until it is a juicy texture (but not too watery). Seed the final 2 guavas, and chop them up into small pieces.

In a large bowl, combine the guava juice, pomegranate seeds, guava pieces and lemon juice. Taste and add sugar as necessary.

Serve, decorating with fresh mint

* If you are feeling lazy, instead of using the blended guava juice you may use store-bought juice.

  6. Guava is humble looking fruit. I find guava very tasty. It is good for health. It is rich in vitamin C. It is great for eyes and heart, skin, hair. It also helps for combating colon and prostate cancer and has many other benefits.
