Penne Arrabiata


Penne Arrabiata is one of those safe and foolproof meals: it's easy to make and always tastes good -- the perfect recipe for a busy weeknight.

Ingredients:

3 garlic cloves, minced
5 tsp olive oil
6 chopped tomatoes
1/2 tsp chili flakes (more or less based on how spicy you want it)
1/2 tsp basil
Salt and pepper to taste
Bag of penne pasta

Heat the olive oil on a medium flame, add the garlic and stir until browned (not BURNT) for about 3-5 minutes. Add the tomatoes and chili flakes. Stir and let cook for about 10 minutes. Add the basil and season with salt and pepper. Cover and cook for an additional 5 to 10 minutes until the tomatoes are cooked through.

In the meantime cook the penne according to the package's instructions. When done, drain the water and add the sauce to the penne.

Garnish with basil and serve with freshly grated parmesan cheese.
