This is the easiest vegetable soup I have ever made. I love this recipe: it's healthy, delicious and is extremely simple to make (just because it is cold outside doesn't mean that you have to spend all your time making soup right?) Now I know the picture isn't the prettiest, but trust me on this one, it tastes really good.
The vegetables listed in the ingredients below are the ones I used, but feel free to experiment and add more. A couple of spoonfuls of pesto may make this soup even more interesting.
The key to making this soup is the cut the vegetables up into small pieces, that way it'll cook quicker.
Ingredients:
1 tomato
1 large potato
1 cup cauliflower heads
1 carrot
1 cup peas
1 cube vegetable bullion
1 garlic minced
4 cups of water
Juice of 1 lemon
4 or 5 FRESH coriander leaves
Salt and Pepper to taste
Chop the tomato, potato, cauliflower heads and carrot into small pieces, as mentioned above.
Bring the water to a boil. Add the potato and carrot and cook for about 5-7 minutes until they are almost cooked through. Add the remaining ingredients and cook for about 10 more minutes.
Season with salt and pepper.
