There are so many things I love about arugula… it has a wonderfully spicy taste that makes even the simplest salads fantastic. Even better, arugula is super healthy and full of vitamins, iron and phytonutrients which supposedly have cancer-fighting properties. What’s not to love about these greens?
Ingredients (I don’t specify amounts – make as much or as little as you like – see vinaigrette proportions below and taste as you go – that’s what I like to do here):
Arugula
Mushrooms
Freshly grated parmesan cheese
Balsamic vinegar
Extra virgin olive oil
Salt and pepper to taste
All you really have to do here is just get a bunch of well-washed arugula, throw it in a bowl and add chopped mushrooms (as much or as little as your heart desires).
For the vinaigrette, merely mix extra virgin olive oil and balsamic vinegar together (2/3 oil and 1/3 vinegar). Add some freshly grated parmesan cheese (again, as much or as little as you want) and season with salt and pepper.
Drizzle the vinaigrette over the salad and enjoy… you can add some extra parmesan cheese too if you like… Yummy!
