Deliciously Healthy Kale Salad

I apologize for not posting any new recipes for 4 months... I recently got married and moved halfway across the world.  I have been doing more cooking than ever before but of course I am rather busy and am having a hard time sharing my culinary adventures...


Aaaaaanyways, one of my newest obsessions these days is with kale.... I really didn't like kale at all at first but then I discovered I was just using it the wrong way.... I don't think that a garlicy dish is the way to go with this earthy green.  On the contrary, I think a simple, fresh salad is the perfect way to serve this healthy nutritious vegetable (kale is thought to have cancer-fighting properties and is rich in iron, and vitamins A, C and K).

I make this salad just a little bit more interesting by adding feta cheese and pine nuts in the mix.  An optional pinch of paprika also gives it an extra punch.  

Anyone who has tasted kale knows that is a bit rough to chew so the key to making a good kale salad is to cut it up into small, manageable pieces.

Ingredients: 
1 bunch of kale, washed and chopped into small pieces.  Make sure to remove the rough stems
2 tablespoons olive oil
2 tablespoons of FRESH lemon juice
Salt and pepper to taste
1/2 teaspoon paprika powder
1/3 cup feta cheese
1 Handful pine nuts

Method:
1. As previously mentioned, wash the kale and tear the leaves into small, manageable pieces.
2. For the dressing, in a small bowl whisk together the olive oil, lemon juice, salt and pepper and paprika.
3. Pour the dressing over the kale and toss so that the greens are evenly coated.
4. Sprinkle the feta cheese and pine nuts over the top

  3. Great idea. I love the nutritional benefits of kale too. I made kale chips the other day. They were perfect just out of the oven. Just toss kale pieces with olive oil and salt. Roast them in the oven. Just don't try to eat them the next day. Not so good. Can't wait to try this!
