Grilled Asparagus Salad



It's finally spring! (Although it doesn't feel like it today... it has been raining for over 24 hours...)  This special season brings with it so many beautiful fruits and veggies... nature is definitely celebrating!

One of my favorite spring vegetables is definitely asparagus. It's so versatile and delicious.  Above all it is extremely healthy too:
Asparagus is a natural diuretic, is great for the heart, and is full of iron, calcium, vitamin C and vitamin A. Due to it's high concentration of folic acid it is often recommended that pregnant women should eat plenty of asparagus to decrease the risk of health defects.


My favorite way of eating asparagus is definitely the simplest... I just grill the asparagus with some olive oil and squeeze some lemon juice on it at the end.

All you have to do is:
1. Drizzle Asparagus with a little bit of olive oil.
2. Grill the asparagus for about 7 minutes.
3. Squeeze lemon juice on the asparagus and sprinkle it with a little bit of sea salt (to taste).
4. Chill the dish.
5. Serve and enjoy!

  5. In discussing prenatal vitamins my doctor told me all about folic acid and how "all of our food" is fortified with it. But when I asked, where is folic acid naturally occurring? she was at a loss.

    Isn't it sad? Thanks for this! Love asparagus!

    Michelle: That is SO SAD!!! Seriously, so many people (and sadly practitioners) focus only on cures that come in the form of pills and ignore all the wonderful remedies that nature has to offer!
