My Husband's Pasta - Made with Mushrooms, Spinach and Balsamic Vinegar


My husband is an amazing cook.  He likes to pretend that he's not but every time he ventures into the kitchen to make something it always turns out fantastic.  This dish is no exception.  When he first told me he was going to be cooking this pasta I was a bit skeptical... the recipe included mushrooms, spinach, balsamic vinegar and orange juice...  It turns out I had nothing to worry about as this is one of the best pasta dishes I have ever tasted.  It is light, tangy and is so delicious that it makes me hungry every time I think about it.  This recipe has definitely become a staple in our home.
Ingredients:
2 tablespoons olive oil
1/2 onion, chopped
200g mushrooms, chopped
2 tablespoons balsamic vinegar
1/4 cup orange juice
1 teaspoon brown sugar (optional)
Salt, to taste
2 - 3 handfuls fresh spinach
Freshly grated parmesan cheese, to serve

Method:
1. Heat olive oil in a saucepan
2. Add onions and cook until translucent (about 4 minutes)
3. Add mushrooms.  Cover saucepan and lower heat. Let them cook for 3-4 minutes or until the juices are released from the mushrooms.
4. Next add the orange juice and balsamic vinegar along with the sugar and salt.
5. In the meantime you should be cooking the pasta of your choice according to package directions.
6. When the pasta is almost done add the spinach into the sauce and let cook for a couple of minutes.  Make enough pasta to serve 2 hungry people.
7. Pour the sauce over the pasta and sprinkle with freshly grated parmesan cheese.

My husband was inspired to make this recipe after he saw this recipe on zesty cook.  As you can see he changed the recipe drastically but the original seems pretty delicious too!

  1. I can't help but drool! I never tasted balsamic except those Lay's chips I eat weekly. I wonder how the pasta tastes!
