Pasta with Lentils and Parsley


Here's a healthy and hearty dish you can make when you want to eat something fantastic but don't have the energy to put much thought into your meal.

This recipe literally calls for 6 ingredients: pasta, lentils, an onion, parsley, olive oil and salt. It is simple but will definitely please the whole family on a busy weeknight.

Ingredients:
1 cup lentils
1/2 package pasta (I used ziti)
2 tablespoons olive oil for frying the onion and 2 tablespoons more to add at the end (4 total)
1 onion, sliced
Large handful chopped parsley
Salt, to taste

Method:
1. Cook the lentils in boiling water (this will take about 20 minutes, more or less depending on the type you are using).  When cooked through set aside.
2. Fry the onions in 2 tablespoons of olive oil until caramelized.  When done, add to the lentils.
3. In the meantime, cook the pasta according to package instructions.
4. Add Lentils and onions to cooked pasta.
5. Add in 2 tablespoons of olive oil and parsley.
6. Season with salt (I used quite a bit in this recipe).
7. Serve hot.
