A Spicy Lentil Dish
I love this dish - it's hearty (eating just a little of it will make you feel full, but in a good way), it's healthy and above all it's so easy to prepare.
I made a bunch of it yesterday afternoon and left it out until my husband came home in the evening and it tasted even better after letting all the flavors mix for a few extra hours.
So cook yourself some of these lentils sometime soon. It's a great way to get your protein, iron and fiber.
Ingredients:
2 cups red lentils, rinsed
2 tablespoons olive oil
1 onion, finely chopped
3-4 cloves garlic, minced
1 tablespoon minced ginger
1 tablespoon cumin seeds
1/2 tablespoon ground cardamom
1 tomato, diced
4 cups water
1/2 green chili, chopped (more or less to taste based on how spicy you want it to be)
Red pepper flakes to taste
Salt, to taste
1/2 to 1 cube vegetable bullion (optional but I always use it - it tastes better with it to be honest)
Method:
1. Heat the olive oil in a large pan. Add the onions and sauté until translucent.
2. Add the garlic, ginger, cumin and cardamom and cook for an additional 2 minutes. Stir to ensure nothing burns.
3. Add the lentils, water, tomato, bullion and chili.
4. Bring the lentils to a boil and then lower the heat and cover. Cook for about 20 minutes or until the lentils are cooked through.
5. Add salt and red pepper flakes to taste.
Serves 6
