Easy Vegetable Curry


I loooove anything curry but always shied away from making it because I always imagined that it would be this horribly complicated endeavor and that I would need a million spices and ingredients to make it... To my delight, I found a recipe that allows me to make a homemade version of one of my favorite dishes in no time at all.

I was in the mood to make a plain vegetable curry, but if you want you can use the same recipe to make chicken or shrimp curry as well (just add the meat in before the potatoes). This dish is sure to impress your dinner guests and no one needs to know how easy it is to make :)

Ingredients:

2 potatoes, chopped
1 large carrot, chopped
1/2 cup peas
1 cup cauliflower
1 - 2 cups green beans (I used fresh beans, but canned is fine)
1 tomato
3 tsp curry powder
1 cube vegetable bullion
salt to taste
1/4 tsp black pepper
Red pepper (the amount depends on how spicy you want this dish)
1/4 cup cream
1/2 cup yogurt
1 - 2 cups of water (to make sure the dish doesn't get dry)
4 tsp olive oil
1 onion, very finely chopped
2 cloves garlic, very finely chopped

Before you start, make sure that all your vegetables are cut in equal-sized pieces so that they cook at the same time and you don't end up with a half-raw, half-burnt dish.

Heat the olive oil in a large pan. Add the onions, cook till brown. Add the garlic. The key to making this is to continiously stir all the ingredients together so that nothing burns.

Next, add the curry powder, the vegetable bullion and the potatoes. Keep stirring. Add the tomatoes. Add a little bit of water and yes, keep stirring. After about 5 minutes, add the carrots and 5 minutes later or when the potatoes and carrots are almost cooked, add all the remaining vegetables EXCEPT the cauliflower. Add about a cup of water to the vegetables, cover, and let cook for 5-7 minutes until all the ingredients are cooked through.

Add more water if you feel the dish is dry, and add the cream and yogurt. Season with salt and black pepper. Add as much red pepper as you like, depending on how spicy you want your dish to be. Finally, add the cauliflower, stir everything together, cover and let cook for 5 minutes more.

I like to serve these veggies with plain white basmati rice.

  1. Alright, here's my problem -- whenever I'm the one cooking the dish, I somehow lose my sense of taste and can never tell how much is too much spice for my guests. Do you have any tricks to get around this?

    Phillygoat- if it gets too spicy you can always make it milder by adding more yogurt or cream. It also always helps to have someone taste it for you before you serve it to make the necessary adjustments. Hope this helps :)
