The Ultimate Comfort Food: Homemade Pizza



I love pizza but I hate having it delivered because no matter how delicious it tastes, it is almost always greasy and heavy. Homemade pizza is different though, when done right its always a wonderful treat. Who says good pizza has to be dripping with oil? 


Here's a recipe that is relatively easy to make -- you'll find that the dough is perfect for a thin and crispy pizza.
Ingredients:

For the dough:
1 1/2 cups flour
1 tsp salt
2 tsp olive oil
1 tsp active dry yeast
1/2 cup water

For the toppings:

1 cup mozzarella cheese
1/2 cup parmesan cheese
4 tablespoons pizza sauce
1 large tomato, chopped into large slices
1/2 cup green olives
1/4 cup mushrooms
Small handful of basil leaves

To make the dough:
Add the flour, salt and yeast into a large bowl, mixing them thoroughly.  Next add the olive oil and water.  Mix the ingredients together, kneading the dough until no clumps remain.  Make the dough into a ball, place in the same large bowl. Cover the bowl and refrigerate for about 3 hours or until the dough ball doubles in size.

To make the pizza:
When the dough is ready, flour your kitchen counter and roll the dough into the shape of your pan. Place the dough into a floured pan and with a fork, poke some holes into your pizza dough (this is so that any extra sauce will seep into the bottom and you won't end up with a soggy pizza).

Preheat your oven to a medium temperature. In the meantime, sauté your vegetables for 4-5 minutes in extra virgin olive oil in order to loose some of the extra water (again, you don't want a soggy pizza).

Spread the sauce evenly over the pizza dough and then add the vegetables. Next, add the basil leaves and sprinkle with cheese.

This recipe is very versatile; you can add more sauce or cheese if you like and feel free to use whichever vegetables you enjoy.

Makes one medium sized pizza.
