Noodles with Thai Green Curry and Veggies


I made this recipe twice in one week.  It's that good. And you don't have to tell anyone that it took a mere 15 minutes to cook this dish from start to finish!

You can throw in whatever veggies you like in here.  Tofu or chicken would also make this meal more substantial.  I, however, kept it light and simple and merely used chives, carrots and broccolini (my new obsession).

Pasta with Lentils and Parsley


Here's a healthy and hearty dish you can make when you want to eat something fantastic but don't have the energy to put much thought into your meal.

This recipe literally calls for 6 ingredients: pasta, lentils, an onion, parsley, olive oil and salt. It is simple but will definitely please the whole family on a busy weeknight.

An Easy Bolognese Sauce Recipe

Here's another pasta recipe.  Last one for a while, I promise (or at least I hope).



I this sauce.... I don't think anyone doesn't. It doesn't need any more introduction so without any further ado here's my recipe (which believe me has been tried and tested).

A Creamless Creamy Mushroom Pasta

I just love, love, love creamy pasta dishes.  However, the amount of cream that goes into these recipes often leaves me slightly traumatized...


One evening however, while I was halfway through making a mushroom pasta recipe that required a significant amount of cream I realized that I didn't have enough cream to complete the recipe.  As a result, I improvised and ended up with a much lighter version of the dish that tasted just as delicious... who knows you don't need cream to create something this good?

A Healthy, Colorful Pasta Salad



I made this salad for lunch this afternoon and let me tell you it was fabulous.  Pasta salads can get a little bit blah so I made it interesting (and healthy) by adding some broccoli florets, cherry tomatoes and red peppers... All the different colors involved made it a feast for the eyes as well as for the tummy (I don't know about you, but I am so much more likely to enjoy something if it looks pretty).

I used a lemon and honey vinaigrette for this recipe and it resulted in the perfect tangy-but-sweet combination.

Pair this salad with a creamy tomato soup and you're all set for your light Sunday brunch this weekend.



My Most Favorite Pasta Sauce Recipe



This sauce serves as my comfort food, I love everything about it: it tastes fabulous, calls for very few ingredients and doesn't require more than 15 minutes of cooking. Yup, it's perfect.

It calls for a little bit of butter and a dash of cream, but seriously, it's worth it... I don't know about you but butter doesn't really bother me as long as it is used in moderation (a little goes a long way).

A good friend of mine taught me how to make this sauce but her version was much more complicated (I actually forgot all the steps she used so I simplified it down to this basic recipe and it still tastes fantastic). Her version used some chicken in the sauce - I am preferring the vegetarian version of this, but feel free to add whatever protein to it you like.
