Deelicious Orange Cardamom Cake


This is definitely the most perfect cake to have in the morning. Its light, full of flavor and is so nice to drink with a nice cup of tea (I've been drinking a lot of tea lately as I've been under the weather a lot these days).

I based this recipe off one I saw on Cooking Light. I skipped the glaze because the cake tasted delicious by itself.

Make it now and ENJOY! :)

Ingredients:
3 cups flour
2 tsp baking powder
2 tsp ground cardamom
1/2 tsp ground cinnamon
1/2 tsp salt
3/4 cup FRESH orange juice
2/3 cups canola oil
1 tablespoon orange zest
2 tablespoons lemon zest
1 tsp vanilla extract
3 large eggs

Preheat oven to 350 degrees F.

Add all the dry ingredients to a large bowl. Mix together. Next add the oil, orange juice and eggs, whisk together for a few minutes until the batter is smooth and clump-free.

Add the batter to a large baking pan and bake for about 50 minutes.

Serves 8
