Sandwich Cookies

Let me begin by saying that I know it looks like a four year old child could have made these cookies and that they look slightly disheveled.... In my defense I was in a rush. Let me assure you though that despite their sub-par appearance they tasted quite delightful.

These cookies are basically 2 simple sugar cookies with a chocolate filling. In this case, I melted a bar of galaxy chocolate (my favorite) to serve the purpose. As always, these are easy to make and can end up looking much prettier than mine if you give them some attention.

Adapted from a recipe on 101 Cookbooks


1 1/4 cups flour
1 tsp baking powder
3 ounces butter
The yolk of 1 egg
2 tsp vanilla
1/2 cup brown sugar
1 tsp salt
1 bar Galaxy chocolate (or whichever type of chocolate you prefer)

Preheat the oven to 350 degrees.

In a bowl combine the flour, baking powder and salt. In a second bowl mix the butter, sugar, yolk and vanilla together. Combine the ingredients of the 2 bowls together and knead into a big ball.

On a well-floured counter, roll the dough into two thin strips. Wrap each strip separately in cling-film and refrigerate for half an hour.

Next, remove the dough from the refrigerator and roll to make the cookies as thin as possible. Cut the cookies into whichever shape you like (hearts for Valentines Day!) and then transfer to a baking sheet lined with parchment paper.

Bake for 7 to 10 minutes.

Melt the chocolate bar in a double boiler and then with a knife transfer a small amount of chocolate onto the flat side of each cookie. Put a second cookie on top and viola, a cookie sandwich :) Do the same with the rest of the cookies.

Makes about 3 dozen small cookies.
